SWEET AND SOUR CHICKEN

Preheat oven to 350 degrees
1 chicken cut into serving parts, about 2 1/2 lbs.
1 small can frozen orange juice
3 Tbsp cider vinegar
1 Tbsp soy sauce
1/2 Tsp dry mustard
1 Tsp salt
1/8 Tsp cayenne pepper
1 Tbsp corn starch
2 Tbsp cold water
2 small oranges
1 green pepper
Rinse chicken parts; pat dry; place skin side up in shallow baking dish.
Mix orange juice with 1 1/2 cans water. Add other ingredients except corn starch and water.
Mix well and pour over chicken. Place on middle rack. Bake uncovered for 60 minutes.
Baste frequently.
Peel 2 small oranges; break in segments.
Wash and cut a green pepper into strips.
Mix cornstarch with water; add to chicken and sauce, mixing well. Add oranges and pepper.
Cover with foil. Bake another 15 minutes.

SWEDISH MEATBALLS – From Libby Becklin

2 Lbs ground round
1 cup milk
1 cup bread crumbs from French bread with no crusts
1 medium onion (grated)
1/4 Tsp allspice
1 Tsp salt
4 cups beef broth
2 eggs, slightly beaten
Butter for browning
Mix milk and bread crumbs. Let stand for one half hour.
Add meat, onions, seasoning and eggs.
Mix five minutes. Allow to rest for half hour.
Shape into balls about an inch in diameter.
Brown in 2 Tbsp melted butter. Place in casserole. Use more butter, as needed.
Add enough butter to drippings to make 4 Tablespoons.
Add 4 Tbsp flour and brown slightly.
Gradually add 4 cups beef stock.
Stir until smooth. Season with salt and pepper and pour over meatballs.
Bake at 325 degrees for one hour.
